Allegheny Marsh Hare Loaf Recipe - Cooking Index
1 1/2 lbs | 681g / 24oz | Muskrat |
2 | Eggs - beaten | |
1 cup | 237ml | Evaporated milk |
1/3 cup | 48g / 1.7oz | Fine dry bread crumbs |
1/4 | Onion - grated | |
1/4 teaspoon | 1.3ml | Dried thyme |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1 teaspoon | 5ml | Worcestershire sauce |
Soak muskrat as described in "Muskrat - Basic Information" (included in this collection), then drain, bone, and grind once.
Mix all ingredients together as for standard meat loaf. Put in a loaf pan, then set the pan in another pan of water. Bake at 350 degrees for 1 1/2 to 2 hours.
