Mulate's Catfish Jambalaya Recipe - Cooking Index
8 | Catfish fillets - (6 oz ea) | |
4 | Yellow onions - chopped | |
2 | Garlic cloves - crushed | |
1/2 | Bell pepper - chopped | |
1 | Celery stalk - chopped | |
1/2 lb | 227g / 8oz | Margarine |
1 | Rotel tomatoes - (10 oz) | |
4 oz | 113g | Fresh mushrooms - sliced |
Salt - to taste | ||
Cayenne pepper - to taste | ||
3 cups | 480g / 16oz | Rice - cooked |
Onion tops - chopped |
Put all ingredients except catfish into saucepan and cook until mixture starts to turn light brown. Season with salt and cayenne pepper while mixture is cooking. Add catfish and cook 15 to 20 minutes longer. Mix with cooked rice and freshly-chopped onion tops. Serve hot.
This recipe yields 6 to 8 servings.
