Avocado And Parmesan Tortellini

Recipe Ingredients

3/4 cup 177mlHeavy cream
1 cup 237mlHaas avocado - pitted and peeled (medium)
3/4 cup 109g / 3.8ozParmesan cheese - grated
2 tablespoons 30mlLemon juice
1   Salt and white pepper
1 lb 454g / 16ozCheese or meat filled tortellini

Recipe Instructions

Put the cream in a medium saucepan or skillet over moderate heat. Meanwhile, in a food processor fitted with a metal blade, puree the avocado with the parmesan cheese, lemon juice, slat and pepper. When the cream is hot but not boiling, stir in the avocado mixture. Continue stirring until the sauce in just heated through, 3-5 minutes. do not over cook. Immediately pour over tortellini.
