Avocado And Parmesan Tortellini Recipe - Cooking Index
3/4 cup | 177ml | Heavy cream |
1 cup | 237ml | Haas avocado - pitted and peeled (medium) |
3/4 cup | 109g / 3.8oz | Parmesan cheese - grated |
2 tablespoons | 30ml | Lemon juice |
1 | Salt and white pepper | |
1 lb | 454g / 16oz | Cheese or meat filled tortellini |
Put the cream in a medium saucepan or skillet over moderate heat. Meanwhile, in a food processor fitted with a metal blade, puree the avocado with the parmesan cheese, lemon juice, slat and pepper. When the cream is hot but not boiling, stir in the avocado mixture. Continue stirring until the sauce in just heated through, 3-5 minutes. do not over cook. Immediately pour over tortellini.
