Stir-Fried Crabmeat With Cellophane Noodles

Recipe Ingredients

1   Cellophane noodles - (3 1/2 oz)
2 tablespoons 30mlVegetable oil
2 tablespoons 30mlChopped shallots
1 cup 237mlThinly-sliced snow peas
1 oz 28gDried tree ear mushrooms - reconstituted in
  Water
2 teaspoons 10mlChopped garlic
1 cup 160g / 5.6ozBean sprouts - (packed)
  Fish sauce (nuoc mam) - to taste
  Freshly-ground black pepper - to taste
1/2 lb 227g / 8ozFresh crab meat - cartilage removed
1/4 cup 15g / 0.5ozChopped green onions

Recipe Instructions

Place the noodles in a large bowl. Cover with warm water and allow to sit for 20 minutes. Drain and pat dry.

In a wok, over medium heat, add the oil. When the oil is hot, add the shallots, peas, mushrooms, garlic and bean sprouts. Season with the fish sauce and black pepper. Stir-fry for 1 minute. Add the crabmeat. Season with the fish sauce and black pepper. Continue to stir-fry for 2 minutes. Add the noodles and green onions. Stir-fry for 1 minute. Remove and serve on a large platter.

This recipe yields 4 servings.
