Mango Chutney Recipe - Cooking Index
1 tablespoon | 15ml | Butter |
1/2 cup | 31g / 1.1oz | Chopped onions |
1 | Salt | |
2 cups | 292g / 10oz | Small-diced mango |
1/2 cup | 118ml | White vinegar |
1/4 cup | 49g / 1.7oz | Sugar |
1 tablespoon | 15ml | Cornstarch |
2 tablespoons | 30ml | Water |
In a saucepan over medium heat, melt the butter. Add the onions. Season with salt. Saute for two minutes. Add the mango. Continue to saute for 2 minutes. Add the vinegar and the sugar. Bring the mixture to a boil. Whisk the cornstarch with the water. Whisk until smooth. Stir the slurry into the mango mixture. Bring the mixture back to a boil. Continue to cook for 4 minutes, stirring constantly. Remove from the heat and cool completely.
Store in an airtight container until ready to use.
This recipe yields about 2 cups.
