1 | Yellow tear drop tomatoes - cleaned, stemmed | |
1 | Red tear drop tomatoes - cleaned, stemmed | |
1/2 cup | 31g / 1.1oz | Julienned red onions |
Drizzle extra-virgin olive oil | ||
Drizzle balsamic vinegar | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
8 oz | 227g | Goat's cheese - crumbled |
In a large salad bowl, combine the spinach, tomatoes, and onions. Mix well. Add the oil and vinegar, to taste. Season with salt and pepper.
To serve, mound the salad in the center of each serving plate. Crumble the cheese over the salad and serve.
