4 cups | 584g / 20oz | Arugula - coarsely chopped |
8 | Plum tomatoes - cored and diced | |
4 teaspoons | 20ml | Lemon juice - fresh |
2 teaspoons | 10ml | Olive oil |
1 teaspoon | 5ml | Kosher salt |
Freshly ground black pepper - to taste |
Toss the arugula, tomatoes, lemon juice and olive oil together. Season with salt and pepper.
