| 2 tablespoons | 30ml | Olive oil | 
| 1/4 cup | 36g / 1.3oz | Diced andouille sausage | 
| 1/4 cup | 15g / 0.5oz | Chopped green onions | 
| 1/4 cup | 27g / 1oz | Chopped celery | 
| 2 tablespoons | 30ml | Minced red bell peppers | 
| 2 tablespoons | 30ml | Peeled chopped tomatoes | 
| 2 teaspoons | 10ml | Minced garlic | 
| 1 teaspoon | 5ml | Bayou Blast - see * Note | 
| 1 cup | 160g / 5.6oz | Coked red kidney beans | 
| Salt - to taste | ||
| Freshly-ground black pepper - to taste | 
* Note: See the "Bayou Blast - {Emeril's Creole Seasoning}" recipe which is included in this collection.
Heat oil in a medium skillet over medium-high heat. When oil is hot, add sausage, green onions, celery, bell peppers, tomatoes, garlic and Bayou Blast; saute 2 minutes. Stir in beans, salt, and 3 turns of pepper; saute 1 minute more.
This recipe yields about 2 cups of relish.
