Red Bean Relish

Recipe Ingredients

2 tablespoons 30mlOlive oil
1/4 cup 36g / 1.3ozDiced andouille sausage
1/4 cup 15g / 0.5ozChopped green onions
1/4 cup 27g / 1ozChopped celery
2 tablespoons 30mlMinced red bell peppers
2 tablespoons 30mlPeeled chopped tomatoes
2 teaspoons 10mlMinced garlic
1 teaspoon 5mlBayou Blast - see * Note
1 cup 160g / 5.6ozCoked red kidney beans
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

* Note: See the "Bayou Blast - {Emeril's Creole Seasoning}" recipe which is included in this collection.

Heat oil in a medium skillet over medium-high heat. When oil is hot, add sausage, green onions, celery, bell peppers, tomatoes, garlic and Bayou Blast; saute 2 minutes. Stir in beans, salt, and 3 turns of pepper; saute 1 minute more.

This recipe yields about 2 cups of relish.
