Jamaican Spiced Vegetables

Recipe Ingredients

2 tablespoons 30mlCayenne pepper
1 teaspoon 5mlGround cinnamon
1 teaspoon 5mlGround nutmeg
1 teaspoon 5mlGround allspice
2 teaspoons 10mlDried chives
2 teaspoons 10mlDried thyme
1 tablespoon 15mlSugar
1 tablespoon 15mlDried minced onion
1 tablespoon 15mlSalt
2   Sweet corn ears - broken in 2
1   Plantain, green - quartered in skin
1   Sweet potato - slice 1/4" thick,
  And blanched
  Oil - to drizzle

Recipe Instructions

Combine spices in a bowl by hand or in food processor. Store in an airtight container.

Sprinkle vegetables with spice and drizzle with oil. Grill 5 minutes per side. Serve with Jamaican Marinated Pork (the recipe for which is included in this collection) or other similar dishes.
