Spicy Peanut Sauce

Recipe Ingredients

10 lbs 4540g / 160ozGarlic cloves - peeled (large)
2/3   Fresh coriander, leaves and upper stems
1/2 cup 99g / 3.5ozUnseasoned peanut butter - see * Note
1/2 cup 118mlThin soy sauce - plus
1 tablespoon 15mlThin soy sauce
1/4 cup 59mlSesame oil
5 tablespoons 75mlSugar
1   Chinese rice wine vinegar
1 tablespoon 15mlHot chili oil

Recipe Instructions

* Note: See the "Chinese Style Peanut Butter" recipe which is included in this collection.

In a food processor, combine the first eight ingredients together. Process until smooth. Place in a saucepan and bring up to a simmer. Remove from the heat and set aside until ready to use.
