Smoked Salmon, Squaquerone Cheese, Red Onion, And Arugula

Recipe Ingredients

1/2 lb 227g / 8ozCream cheese - room temperature
1/4 cup 59mlSour cream
1/2 cup 118mlButtermilk
3/4 cup 177mlPlain low-fat yogurt
3 tablespoons 45mlOlive oil
  Juice of one lemon
  Salt - to taste
  Freshly-ground white pepper - to taste
8   Griddle bread
  (or any good quality white bread)
1 lb 454g / 16ozSmoked salmon - thinly sliced
1 lb 454g / 16ozRed onion - shaved paper thin (small)
2 cups 474mlArugula - cleaned and stemmed
  Chopped parsley
  Emeril's Essence - see * Note

Recipe Instructions

In a mixing bowl, combine the cream cheese, sour cream, buttermilk, yogurt, 1 tablespoon olive oil, and lemon juice. Mix until smooth. Season with salt and pepper. Spread the griddle bread with the cheese. Layer the bread with the salmon, red onion and arugula. Top with another slice of bread and place on a plate. Garnish with parsley and Emeril's Essence.

This recipe yields 4 sandwiches.
