Marinated Mushrooms Recipe - Cooking Index
2 tablespoons | 30ml | Lemon juice |
1/4 cup | 59ml | Olive oil |
1 1/2 teaspoons | 7.5ml | Dijon mustard |
1/2 teaspoon | 2.5ml | Honey |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Crushed red pepper |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 lb | 454g / 16oz | Small button mushrooms - washed right |
Before you use them | ||
12 | Cherry tomatoes - halved | |
1 cup | 110g / 3.9oz | Grated carrots |
2 tablespoons | 30ml | Chopped chives |
In a medium bowl, combine the lemon juice, olive oil, Dijon, honey, salt and crushed red pepper, salt and pepper. Add the mushrooms and toss to coat. Allow to marinate for 4 to 8 hours, stirring occasionally. When ready to serve, add the tomatoes, carrots and fresh chopped chives with the mushrooms. Adjust the seasonings and place in a serving dish.
This recipe yields 6 servings.
