Wild Wild Rice

Recipe Ingredients

1 teaspoon 5mlOil
1 cup 62g / 2.2ozCubed, cooked duck meat
1 tablespoon 15mlMinced shallots
1/2 cup 73g / 2.6ozDiced apple
2 cups 320g / 11ozCooked wild rice
1 cup 237mlStock - maybe less
1/2 tablespoon 7.5mlChopped fresh sage - plus
  Extra chopped fresh sage - for garnish
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Heat oil, add duck and cook, tossing, for 1 minute. Add shallots and apples and cook for 3 minutes. Add rice and stir to mix. Gradually add enough stock, a little at a time, until rice is moistened. Simmer until heated through and season with sage, salt and pepper. Serve garnished with extra sage.

This recipe yields 3 to 4 servings.
