White Bean Relish

Recipe Ingredients

1 tablespoon 15mlOlive oil
2 oz 56gDiced andouille sausage
1/4 cup 15g / 0.5ozChopped green onions
1/4 cup 27g / 1ozChopped celery
2 tablespoons 30mlMinced red bell peppers
1 tablespoon 15mlMinced shallots
2 teaspoons 10mlMinced garlic
1 cup 160g / 5.6ozCooked white navy beans
2 tablespoons 30mlPeeled, seeded, chopped Italian plum
  Tomatoes
1 teaspoon 5mlEmeril's Essence - see * Note
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

* Note: See the "Emeril's Essence Information" recipe which is included in this collection.

In a saute pan, heat the olive oil. When the pan is smoking hot, render the sausage for 1 minute. Add the onions, celery, red peppers, shallots and garlic for 1 minute. Season with Emeril's Essence. Stir in the beans and tomatoes. Saute for 1 minute and season with salt and pepper. Remove from the heat.

This recipe yields 2 cups of relish.
