White Bean Relish Recipe - Cooking Index
1 tablespoon | 15ml | Olive oil |
2 oz | 56g | Diced andouille sausage |
1/4 cup | 15g / 0.5oz | Chopped green onions |
1/4 cup | 27g / 1oz | Chopped celery |
2 tablespoons | 30ml | Minced red bell peppers |
1 tablespoon | 15ml | Minced shallots |
2 teaspoons | 10ml | Minced garlic |
1 cup | 160g / 5.6oz | Cooked white navy beans |
2 tablespoons | 30ml | Peeled, seeded, chopped Italian plum |
Tomatoes | ||
1 teaspoon | 5ml | Emeril's Essence - see * Note |
Salt - to taste | ||
Freshly-ground black pepper - to taste |

In a saute pan, heat the olive oil. When the pan is smoking hot, render the sausage for 1 minute. Add the onions, celery, red peppers, shallots and garlic for 1 minute. Season with Emeril's Essence. Stir in the beans and tomatoes. Saute for 1 minute and season with salt and pepper. Remove from the heat.
This recipe yields 2 cups of relish.
