Roasted Garlic Vinaigrette Recipe - Cooking Index
| 2 tablespoons | 30ml | Chopped shallots |
| 1/3 cup | 78ml | Vhite wine vinegar |
| 1 teaspoon | 5ml | Dijon mustard |
| 1/2 teaspoon | 2.5ml | Salt |
| 1 | White pepper | |
| 1 | Egg white | |
| 6 | Garlic cloves | |
| 1 cup | 237ml | Olive oil |
Roast the garlic cloves in a 360 degree oven until softened and lightly browned. In a food processor, process all ingredients except oil. While motor is running, add oil in a thin stream until emulsified.
Serves 12.
