Raspberry Gastrique Recipe - Cooking Index
5 cups | 1185ml | Raspberries |
1 1/2 cups | 297g / 10oz | Sugar |
1/2 cup | 118ml | Raspberry vinegar |
Combine all ingredients in a small saucepan, mashing raspberries with the back of a spoon. Bring to a simmer and cook until thick and syrupy. Strain through a fine sieve to remove seeds, pressing to extract all the juice.
