Pork Roast 'N' French-Fry Po-Boy

  Oil - for deep-frying
1   Idaho potato - cut 1/4" by 2" stick
1   French bread
2 tablespoons 30mlMayonnaise
1/2 cup 118mlShredded lettuce
1   Tomato - sliced
1 lb 454g / 16ozSlow, slow-roasted pork roast - pulled into tender shreds

Recipe Instructions

Heat oil in a deep-fryer to 360 degrees. Fry potatoes until brown and crunchy, 8 to 10 minutes.

Slice open bread. Spread with mayonnaise and fill with lettuce and tomato. Fill with pulled pork and top with French fries.
