Piccalilli Recipe - Cooking Index
Piccalilli is a relish of chopped vegetables and spices.
Serves: 1 people4 | Green tomatoes | |
1/4 | Cabbage | |
1 1/2 | White onions | |
1 | Cucumber | |
1 | Red bell pepper | |
1/4 cup | 59ml | Pickling salt |
1 1/2 cups | 355ml | Vinegar |
3/4 cup | 148g / 5.2oz | Sugar |
1/2 teaspoon | 2.5ml | Turmeric |
Pickling Spice Sachet | ||
1/4 tablespoon | 3.8ml | Ginger |
1/2 tablespoon | 7.5ml | Dried mustard |
1/2 tablespoon | 7.5ml | Mustard seed |
1 teaspoon | 5ml | Celery seed |
Pickled whole onions - to taste |
Dice the tomatoes, cabbage, white onions, cucumber, and red bell pepper. Layer ingredients in a bowl with pickling salt. Store in the refrigerator overnight to remove moisture from the vegetables.
To make the marinade, combine vinegar, sugar, turmeric, ginger, dried mustard, mustard seed, celery seed and pickling spice sachet in a pot. Bring ingredients to a boil for two minutes. Add vegetables and boil for an additional 10 minutes. Remove pickling spice sachet and add pickled onions; boil for two more minutes. Remove from heat and cool.
Store in covered glass jars in the refrigerator and serve chilled.
