Mushroom Dressing

Recipe Ingredients

3/4 cup 177mlOlive oil
1 cup 237mlSliced assorted fresh wild mushrooms
  (Chanterelles, Shiitake, Oyster, Black
  Trumpets)
1   Egg - (optional)
4 tablespoons 60mlDry sherry
2 tablespoons 30mlFinely-chopped shallots
2 tablespoons 30mlFinely-chopped garlic
2 tablespoons 30mlFresh lemon juice
1 teaspoon 5mlSalt
  Freshly-ground black pepper

Recipe Instructions

Heat 1/4 cup oil in a medium skillet and saute mushrooms 3 minutes. Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
