Mushroom Dressing Recipe - Cooking Index
3/4 cup | 177ml | Olive oil |
1 cup | 237ml | Sliced assorted fresh wild mushrooms |
(Chanterelles, Shiitake, Oyster, Black | ||

1 | Egg - (optional) | |
4 tablespoons | 60ml | Dry sherry |
2 tablespoons | 30ml | Finely-chopped shallots |
2 tablespoons | 30ml | Finely-chopped garlic |
2 tablespoons | 30ml | Fresh lemon juice |
1 teaspoon | 5ml | Salt |
Freshly-ground black pepper |
Heat 1/4 cup oil in a medium skillet and saute mushrooms 3 minutes. Transfer mixture to food processor and add egg (if using). Process 30 seconds and add remaining ingredients and 3 turns pepper. Process 15 seconds and with machine running, add remaining oil until thoroughly blended.
