1/2 lb | 227g / 8oz | White cabbage - shredded |
1/2 lb | 227g / 8oz | Red cabbage - shredded |
1/2 lb | 227g / 8oz | Spinach - shredded |
1 cup | 62g / 2.2oz | Julienned red onions |
2/3 cup | 41g / 1.4oz | Chopped green onions |
1 teaspoon | 5ml | Minced garlic |
1/2 cup | 73g / 2.6oz | Finely-chopped parsley |
1 cup | 237ml | Homemade mayonnaise |
1/4 cup | 59ml | Creole mustard |
1 teaspoon | 5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Cayenne pepper |
2 teaspoons | 10ml | Honey |
In a mixing bowl, toss the cabbages, spinach, red onion, green onions, garlic, and parsley. Stir in the mayonnaise and Creole mustard. Season with salt, pepper, cayenne and honey. Cover and refrigerate for 1 hour before serving.
This recipe yields 8 cups of slaw for 6 to 8 servings.
