Patio Corn Salad Recipe - Cooking Index
2 | Corn - (17 oz ea) - drained | |
1 | Cucumber - diced (medium) | |
1/4 cup | 15g / 0.5oz | Diced onion |
1/4 cup | 59ml | Sour cream |
2 tablespoons | 30ml | Mayonnaise |
1 tablespoon | 15ml | Vinegar |
1/4 teaspoon | 1.3ml | Dry mustard |
1/4 teaspoon | 1.3ml | Celery seed |
1/2 teaspoon | 2.5ml | Salt |
2 teaspoons | 10ml | Tomatoes - chopped (small) |
Place the drained corn in a large serving bowl. Add the cucumber and onion, and mix well. In a small bowl, combine the sour cream, mayonnaise, vinegar, dry mustard, celery seed and salt. Mix well and gently stir into the vegetables. Scatter the tomato pieces on top of the salad.
Cover and chill for at least two hours before serving.
Serves 6 to 8.
