Lyonnaise Mirlitons Recipe - Cooking Index
2 tablespoons | 30ml | Vegetable oil |
1 cup | 62g / 2.2oz | Thinly-sliced onions |
2 cups | 474ml | Peeled, seeded, thinly-sliced mirlitons |
(chayotes) | ||
1 tablespoon | 15ml | Chopped garlic |
2 tablespoons | 30ml | Chopped green onion |
1 tablespoon | 15ml | Chopped parsley |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
In a medium saute pan heat oil over low heat, add onions and cook, stirring, until golden-brown and sweet, about 10 minutes. Add garlic and continue cooking 2 minutes. Add mirlitons and saute, tossing and mixing, 3 minutes. Add green onion and parsley, and season to taste with salt and pepper.
This recipe yields 3 to 4 servings.
