Old Fashioned Southern-Style Greens Recipe - Cooking Index
For additional flavor, add turnips, new potatoes, or additional bacon drippings during cooking.

Bacon drippings | ||
3 cups | 711ml | Water |
2 teaspoons | 10ml | Vinegar |
Salt and pepper - to taste |
* Note: Mustard greens, turnip greens, beet greens, collards, kale, Swiss chard, dandelion, etc.
Add the ham hock and bacon to water and boil uncovered for about 40 minutes, or until the water is reduced by half.
Meanwhile, trim and wash the greens in at least three changes of water to remove the dirt and grit. Add greens, onion and vinegar to the water and simmer slowly for about an hour. Season with salt and pepper to taste. Discard ham hock or bacon and drain greens before serving.
Serves 4.
