1/2 lb | 227g / 8oz | Black beans - cooked until tender, |
Cooled - (2 to 2 1/2 cups) | ||
1 cup | 62g / 2.2oz | Roasted corn kernels |
1/4 cup | 15g / 0.5oz | Diced red onion |
1/4 cup | 36g / 1.3oz | Diced red bell pepper |
2 tablespoons | 30ml | Chopped cilantro |
Juice of 1 lemon | ||
Juice of 1 lime | ||
Salt - to taste | ||
Freshly-ground white pepper - to taste |
Drain beans. In a bowl combine beans with remaining ingredients; season to taste with salt and pepper.
This recipe yields about 4 cups.
