Bubble And Squeak Recipe - Cooking Index
This is a good way to use leftover potatoes and vegetables.
Courses: Side dish1 1/2 cups | 355ml | Cooked, mashed potatoes |
1 1/2 cups | 219g / 7.7oz | Cooked, diced Brussels sprouts |
1 | Egg - beaten | |
1/2 cup | 73g / 2.6oz | Grated cheddar cheese |
1 | Nutmeg | |
Salt and pepper - to taste | ||
1/2 cup | 31g / 1.1oz | Flour |
Vegetable oil - for frying |
Combine potatoes, Brussels sprouts, egg, cheese, and nutmeg in a medium bowl. Form mixture into four patties. Season with salt and pepper. Dust patties lightly with flour and place in hot oil. Flip when brown, about two to three minutes per side. Drain on paper towels and serve.
Serves 2.
