Trail Drive And Bunkhouse Milk Gravy

Recipe Ingredients

2 tablespoons 30mlMeat drippings, bacon drippings, or lard
3 tablespoons 45mlUnbleached all-purpose flour
1   Evaporated milk - (12 oz)
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

In a large skillet, heat the drippings over medium heat. Stir in the flour and cook for 2 to 3 minutes, until the flour turns golden. Add the milk and half a can of water. Cook, stirring, until the gravy is smooth and thickened. Season to taste with salt and pepper and serve over biscuits.

This recipe yields about 2 cups of gravy.
