Lemon Drop Cookies Recipe - Cooking Index
These crunchy cookies have a wonderfully refreshing lemon flavor that is perfect after any type of meal. They can turn an ordinary fruit plate into a truly special dessert. They are also so unusual, so delicious, and so very easy to make that they can quickly become habit-forming!

| 1/2 cup | 99g / 3.5oz | Sugar |
| 1 teaspoon | 5ml | Grated lemon rind - yellow part only |
| 1 teaspoon | 5ml | Pure lemon extract |
| 1/2 teaspoon | 2.5ml | Baking powder |
| 2/3 cup | 41g / 1.4oz | Unbleached all-purpose flour |
Preheat the oven to 325 degrees. Line a baking sheet with aluminum foil.
Place the egg in a medium bowl and whip until frothy. Add the sugar and mix until the sugar is completely dissolved. Beat in the lemon rind, lemon extract, and baking powder. Slowly beat in the flour until you have a smooth mixture.
Drop the dough by tablespoonsful onto the baking sheet. Bake for about 14 minutes, or until the cookies start to color. Allow to cool completely on a wire rack before peeling the cookies off the foil.
This recipe yields 16 cookies.
In a flash: Omit the lemon rind and add another 1/2 teaspoon lemon extract
Spin off: Crumble cookies for a tasty topping on fruit salads or for the crust of a cheesecake.
