Gouda And Strawberry Salad Recipe - Cooking Index
6 cups | 1422ml | Romaine, spinach or radicchio greens |
8 oz | 227g | Gouda cheese - sliced in wedges |
2 cups | 474ml | Sliced juicy red strawberries |
1/2 cup | 118ml | Ready-made toasted ground pecans |
Strawberry Vinaigrette | ||
1/4 cup | 59ml | Seedless strawberry jam or preserves |
3/4 cup | 177ml | Extra-virgin olive oil |
3/4 cup | 177ml | Red wine strawberry or raspberry vinegar |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
For the vinaigrette, whisk all ingredients together in a small bowl. Place in a jar with lid and chill until ready to use.
Arrange greens on four salad plates. Arrange cheese wedges and strawberries alternately on greens. Use 2 ounces cheese and 1/2 cup strawberries per plate. Divide dressing between the four plates and garnish with 2 tablespoons of toasted ground pecans on top of salads.
