Gouda And Strawberry Salad

Recipe Ingredients

6 cups 1422mlRomaine, spinach or radicchio greens
8 oz 227gGouda cheese - sliced in wedges
2 cups 474mlSliced juicy red strawberries
1/2 cup 118mlReady-made toasted ground pecans
  Strawberry Vinaigrette
1/4 cup 59mlSeedless strawberry jam or preserves
3/4 cup 177mlExtra-virgin olive oil
3/4 cup 177mlRed wine strawberry or raspberry vinegar
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

For the vinaigrette, whisk all ingredients together in a small bowl. Place in a jar with lid and chill until ready to use.

Arrange greens on four salad plates. Arrange cheese wedges and strawberries alternately on greens. Use 2 ounces cheese and 1/2 cup strawberries per plate. Divide dressing between the four plates and garnish with 2 tablespoons of toasted ground pecans on top of salads.

This recipe yields 4 servings.
