Mashed Potatoes for the '90s (Basic Mix)

Recipe Ingredients

4 cups 584g / 20ozDiced red potatoes - skin left on
1 1/2   Unsalted butter
1/4 cup 59mlHeavy cream - (to 1/2 cup)
  Dried potato flakes
  Salt and pepper - to taste

Recipe Instructions

Bring 4 cups of water to a boil, and add diced red potatoes. Boil for approximately 15 minutes, until tender. Drain.

In a mixing bowl, mix potatoes and butter with a hand mixer, and gradually add the cream until the desired consistency is reached. Add more cream to thin, and add more potato flakes to thicken. Salt and pepper to taste.
