Lemony Garbanzo Spread Recipe - Cooking Index
This traditional Mediterranean garbanzo bean puree has added zest to centuries of bread eating and enjoyment. You may also enjoy it as a dip for crisp vegetables.
Cuisine: Italian15 oz | 426g | Garbanzo beans - (1 can) - rinsed, drained |
2 | Garlic cloves | |
1 | Green onion - cut into 1" pieces | |
2 tablespoons | 30ml | Fresh lemon juice |
1 tablespoon | 15ml | Extra-virgin olive oil |
1/4 teaspoon | 1.3ml | Salt |
1/8 teaspoon | 0.6ml | Freshly-ground black pepper |
2 tablespoons | 30ml | Plain yogurt |
Process all the ingredients in a food processor or blender until smooth. Transfer to a serving bowl. The spread will keep for several days in the refrigerator.
This recipe yields about 1 1/2 cups of spread.
Cooks Tip: Spice up this basic spread by adding your favorite spice or herb. Cumin or curry adds wonderful flavor. Add chopped fresh herbs for a great herbal spread.
