Herbed New Potatoes Recipe - Cooking Index
1 1/2 tablespoons | 22ml | Olive oil ("pure" or extra-virgin) |
2 lbs | 908g / 32oz | Small red new potatoes - rinsed, quartered |
2 | Garlic cloves - thinly sliced | |
1 | Fresh rosemary sprig - chopped | |
(or 1 teaspoon dried rosemary) | ||
1 | Fresh thyme sprig - chopped | |
(or 1 teaspoon dried thyme) | ||
Freshly-ground black pepper - to taste | ||
Salt - to taste |
Heat oil in a nonstick skillet until hot enough to sizzle a piece of potato. Turn heat to medium-high and add potatoes and garlic, turning often, until evenly browned. Sprinkle with rosemary and thyme; cover and cook until the potatoes are tender; about 10 minutes.
Sprinkle with pepper and salt, and serve.
