Mango Chutney

Recipe Ingredients

6   Mangoes - peeled, sliced
1   Fresh gingerroot - (1 inch) - peeled, and
  Thinly sliced
1 cup 160g / 5.6ozLight brown sugar - (packed)
8   Garlic cloves - (to 10) - peeled and sliced
1 cup 237mlCider vinegar
1 teaspoon 5mlGround dried red chilies - or to taste
  Salt - to taste

Recipe Instructions

Combine all of the ingredients in a medium saucepan. Bring to a boil and reduce the heat to low. Simmer for 30 to 40 minutes, stirring occasionally. Remove the pan from the heat and allow the chutney to cool before serving as a dip or topping.

Yields 2 to 4 servings.
