Mango Chutney Recipe - Cooking Index
6 | Mangoes - peeled, sliced | |
1 | Fresh gingerroot - (1 inch) - peeled, and | |
Thinly sliced | ||
1 cup | 160g / 5.6oz | Light brown sugar - (packed) |
8 | Garlic cloves - (to 10) - peeled and sliced | |
1 cup | 237ml | Cider vinegar |
1 teaspoon | 5ml | Ground dried red chilies - or to taste |
Salt - to taste |
Combine all of the ingredients in a medium saucepan. Bring to a boil and reduce the heat to low. Simmer for 30 to 40 minutes, stirring occasionally. Remove the pan from the heat and allow the chutney to cool before serving as a dip or topping.
Yields 2 to 4 servings.
