White Bean Pistachio Salad Vinaigrette Recipe - Cooking Index
California pistachios add lots of texture to this flavorful bean salad.
Courses: Salads15 oz | 426g | White beans - (1 can) - drained and rinsed |
2 cups | 220g / 7.8oz | Sliced celery |
1/2 cup | 31g / 1.1oz | Diced red onion |
1/2 cup | 73g / 2.6oz | Shelled natural California pistachios - coarsely chopped |
1 teaspoon | 5ml | Black pepper, freshly ground |
2 tablespoons | 30ml | Fresh thyme leaves |
(or 1 1/2 teaspoons dried thyme) | ||
1 teaspoon | 5ml | Dried tarragon |
1/3 cup | 78ml | White wine vinegar |
2 tablespoons | 30ml | Sugar |
Salad greens |
Combine all ingredients except salad greens; toss well. Cover and chill for 1 to 2 hours to allow flavors to blend. Serve on beds of salad greens. This recipe serves 4.
