White Bean Pistachio Salad Vinaigrette

California pistachios add lots of texture to this flavorful bean salad.

Recipe Ingredients

15 oz 426gWhite beans - (1 can) - drained and rinsed
2 cups 220g / 7.8ozSliced celery
1/2 cup 31g / 1.1ozDiced red onion
1/2 cup 73g / 2.6ozShelled natural California pistachios - coarsely chopped
1 teaspoon 5mlBlack pepper, freshly ground
2 tablespoons 30mlFresh thyme leaves
  (or 1 1/2 teaspoons dried thyme)
1 teaspoon 5mlDried tarragon
1/3 cup 78mlWhite wine vinegar
2 tablespoons 30mlSugar
  Salad greens

Recipe Instructions

Combine all ingredients except salad greens; toss well. Cover and chill for 1 to 2 hours to allow flavors to blend. Serve on beds of salad greens. This recipe serves 4.
