1 teaspoon | 5ml | Vanilla |
2 cups | 125g / 4.4oz | Rolled oats |
3/4 cup | 46g / 1.6oz | Whole-wheat flour |
1/3 cup | 78ml | Unprocessed bran |
1 1/2 teaspoons | 7.5ml | Allspice |
1/2 teaspoon | 2.5ml | Baking soda |
1/4 teaspoon | 1.3ml | Salt |
1 cup | 146g / 5.1oz | Chopped, pitted prunes - (about 6 ounces) |
1 cup | 237ml | Apple - shreded (medium) |
1 cup | 146g / 5.1oz | Chopped walnuts |
In mixing bowl, cream butter, sugar, egg, and vanilla. Combine oats, flour, bran, allspice, soda, and salt; mix into creamed mixture. Stir in prunes, apple, and walnuts. Drop by generous spoonfuls onto lightly greased baking sheets. Flatten to about 1/2-inch. Bake at 350 degrees for 15 minutes or until lightly browned. Cool on racks. Store in airtight container. Securely wrapped, cookies can be frozen. This recipe yields 12 large cookies.
