Cucumbers And Country Ham Salad

Recipe Ingredients

1 1/2 cups 355mlPeanut oil
1 1/2 tablespoons 22mlCreamy peanut butter
2 teaspoons 10mlSoy sauce
1/2 cup 118mlCider vinegar
2 teaspoons 10mlDijon mustard
2 teaspoons 10mlFreshly chopped herbs
  Salt and pepper - to taste
8   Cucumbers - peeled
1   Red leaf lettuce head
6 oz 170gCooked country ham - julienned
3/4 cup 177mlUnsalted, roasted peanuts

Recipe Instructions

In blender or food processor make a dressing of peanut oil, peanut butter, soy sauce, vinegar, mustard, and herbs. Add salt and pepper if needed. Split peeled cucumbers into halves and seed. Cut cucumbers into spaghetti-like strands. Portion the cucumber strands around the borders of 8 chilled plates. Place the lettuce leaves in the center of each of the plates. Arrange the country ham strips over the lettuce. Spoon 3 to 4 tablespoons of dressing over each salad. Top each chilled salad with peanuts. This recipe serves 8.
