Cucumbers And Country Ham Salad Recipe - Cooking Index
| 1 1/2 cups | 355ml | Peanut oil |
| 1 1/2 tablespoons | 22ml | Creamy peanut butter |
| 2 teaspoons | 10ml | Soy sauce |
| 1/2 cup | 118ml | Cider vinegar |
| 2 teaspoons | 10ml | Dijon mustard |
| 2 teaspoons | 10ml | Freshly chopped herbs |
| Salt and pepper - to taste | ||
| 8 | Cucumbers - peeled | |
| 1 | Red leaf lettuce head | |
| 6 oz | 170g | Cooked country ham - julienned |
| 3/4 cup | 177ml | Unsalted, roasted peanuts |
In blender or food processor make a dressing of peanut oil, peanut butter, soy sauce, vinegar, mustard, and herbs. Add salt and pepper if needed. Split peeled cucumbers into halves and seed. Cut cucumbers into spaghetti-like strands. Portion the cucumber strands around the borders of 8 chilled plates. Place the lettuce leaves in the center of each of the plates. Arrange the country ham strips over the lettuce. Spoon 3 to 4 tablespoons of dressing over each salad. Top each chilled salad with peanuts. This recipe serves 8.
