Cranberry-Cheese Bread

Recipe Ingredients

2 cups 125g / 4.4ozAll-purpose flour
2 teaspoons 10mlBaking powder
1 cup 198g / 7ozSugar
1/2 teaspoon 2.5mlSalt
2 teaspoons 10mlGrated orange peel
2 tablespoons 30mlButter
  Juice of 1 orange - plus
  Enough water to make 3/4 cup mixture
1   Egg - beaten
1 1/2 cups 219g / 7.7ozShredded Wisconsin Cheddar cheese
1 cup 93g / 3.3ozFresh or frozen cranberries - thawed if frozen
3/4 cup 109g / 3.8ozChopped walnuts

Recipe Instructions

Preheat oven to 350 degrees. In large bowl combine flour, baking powder, sugar, salt and orange peel. Cut in butter. Mix in juice mixture, egg, and cheese. Stir in cranberries and walnuts just to blend thoroughly. Turn into lightly buttered 9- by 5- by 3-inch loaf pan; level top. Bake for 60 to 80 minutes or until pick inserted in center comes out clean. Cool in pan 10 minutes. Turn out onto rack to cool completely. Wrap securely. For best texture and flavor, let stand at least 8 hours before slicing. This recipe yields 1 loaf of bread.
