Watermelon Rind Preserves Recipe - Cooking Index
| 1 lb | 454g / 16oz | Watermelon cubes |
| 2 teaspoons | 10ml | Water |
| 2 tablespoons | 30ml | Lime - (calcium oxide) |
| 2 cups | 396g / 13oz | Sugar |
| 1 teaspoon | 5ml | Water |
| 1/2 | Lemon - sliced |
1. Soak melon in limewater for 3+ 1/2 hours. Drain.
2. Soak in clear water for 1 hour. Drain.
3. Cover with water and boil for 1+ 1/2 hour. Drain.
4. Make syrup fo2 c. sugar and 1 quart water.
5. Add rind and boil for 1 hour.
6. As syrup thickens add lemon [half ob. for each lb. of melon].
7. When syrup is thick and rind clear, pack in hot, sterilized jars, top with syrup and seal.
