I think it is important to let our children know that not all Americans have enjoyed sweet things in the forms that are so common today. This is such a treat -- a treat from the American Indian community.
Courses: Dessert2 cups | 125g / 4.4oz | Cornmeal |
1 cup | 62g / 2.2oz | Bing cherries - pitted |
1/2 lb | 227g / 8oz | Butter - softened |
2 cups | 320g / 11oz | Brown sugar |
Place the cornmeal on a cookie sheet and toast in a 325F oven until it begins to brown. Careful -- this will not take long.
Drain the cherries well and chop coarsely.
Mix all the ingredients together well and chill in the refrigerator.
To serve, simply dish out by the tablespoonful. It can be eaten like candy.
