Vanilla Custard Recipe - Cooking Index
2 | Eggs - separated | |
1/2 cup | 99g / 3.5oz | Sugar |
1/2 cup | 118ml | Milk |
2 tablespoons | 30ml | Flour |
1 teaspoon | 5ml | Vanilla extract |
Plus vanilla extract to taste |
In the top pan of a double boiler, combine egg yolks, sugar, milk, flour, and the 1 teaspoon vanilla.
Whisk to blend, then place over gently boiling water and cook, stirring, until mixture is thickened and coats the back of a spoon. Remove from heat and let cool to room temperature.
In a bowl beat egg whites until stiff peaks form. Gently fold egg whites into custard. Add vanilla to taste.
