Tropical Smoothie

Recipe Ingredients

1   Hinoichi soft tofu - drained
1   Banana - very ripe (medium)
3 tablespoons 45mlSugar
1/3 cup 78mlFrozen pineapple juice concentrate - defrosted
1 1/2 teaspoons 7.5mlVanilla extract
1 teaspoon 5mlCoconut extract dash salt
1 cup 146g / 5.1ozChopped fresh or frozen mango
1 cup 237mlWater
4   Pineapple wedges - (optional)

Recipe Instructions

Coat pan with non-stick cooking spray.

Over medium high heat, stir-fry crumbled tofu with beans, garlic and chili powders. Cook uncovered for 7-9 mins. so liquids evaporate & flavors blend. Sprinkle with green onions before serving, and shredded cheese if desired.

Note: Spicy Chili makes a great filling for burritos!
