1 | Hinoichi soft tofu - drained | |
1 | Banana - very ripe (medium) | |
3 tablespoons | 45ml | Sugar |
1/3 cup | 78ml | Frozen pineapple juice concentrate - defrosted |
1 1/2 teaspoons | 7.5ml | Vanilla extract |
1 teaspoon | 5ml | Coconut extract dash salt |
1 cup | 146g / 5.1oz | Chopped fresh or frozen mango |
1 cup | 237ml | Water |
4 | Pineapple wedges - (optional) |
Coat pan with non-stick cooking spray.
Over medium high heat, stir-fry crumbled tofu with beans, garlic and chili powders. Cook uncovered for 7-9 mins. so liquids evaporate & flavors blend. Sprinkle with green onions before serving, and shredded cheese if desired.
Note: Spicy Chili makes a great filling for burritos!
