Chive And Cheddar Biscuits Recipe - Cooking Index
Drop-style biscuits are a little heavier. When baking, be sure to use precise measurements for all ingredients.
Courses: Breads2 cups | 125g / 4.4oz | All-purpose flour |
1 tablespoon | 15ml | Baking powder |
1 teaspoon | 5ml | Salt |
1/4 cup | 49g / 1.7oz | Vegetable shortening |
1 cup | 146g / 5.1oz | Grated cheddar or other sharp cheese |
1/2 cup | 73g / 2.6oz | Chopped fresh chives |
1 cup | 237ml | 2% milk |
3 tablespoons | 45ml | Butter - (1/4 stick) - melted |
Preheat oven to 450 degrees.
In a large bowl, mix the flour, baking powder, and salt with a fork. With a pastry cutter, cut in the shortening until the mixture resembles coarse crumbs. Stir in the grated cheese and chives. Add the milk and stir just until the mixture forms a soft dough that pulls away from the side of the bowl. Turn the dough out onto a lightly floured surface; knead quickly to mix the dough thoroughly.
Roll dough into cylinder. Cut into 1-inch slices and place on cookie sheet. Brush with the melted butter. Bake until golden brown, about 12 to 15 minutes.
Makes 1 1/2 dozen biscuits.
