Sweet Fried Bannanas

Recipe Ingredients

4   Bananas large
2 tablespoons 30mlSugar
2 tablespoons 30mlLemon juice
1/2 teaspoon 2.5mlGrated orange peel
3 oz 85gRum
2 tablespoons 30mlFlour
1 tablespoon 15mlOlive oil
  Egg white - (beaten stiff)
1/2 cup 118mlWater
1/2 cup 118mlOlive oil - (for frying)

Recipe Instructions

Cut bananas into halves lengthwise. sprinkle with sugar, lemon juice, orange peel, and Rum. Let stand for 2 hours. Make a batter of flour, water, and 1 tablespoon oil, mixing well, and blend in stiff egg white. Drain bananas, dip into batter and fry in hot olive oil until just golden in color. Sprinkle with sugar and serve hot.
