Stuffed Date Drops

Recipe Ingredients

1 lb 454g / 16ozPitted dates
1/4 lb 113g / 4ozPecan halves
1/4 cup 49g / 1.7ozShortening
3/4 cup 120g / 4.2ozBrown sugar
1   Egg
1 1/4 cups 78g / 2.8ozFlour
1/2 teaspoon 2.5mlBaking powder
1/2 teaspoon 2.5mlBaking soda
1/4 teaspoon 1.3mlSalt
1/2 cup 118mlSour cream
1/2 cup 99g / 3.5ozButter or margarine
3 cups 594g / 20ozSifted powdered sugar
3/4 teaspoon 3.8mlVanilla
2 tablespoons 30mlWater - (more if needed)

Recipe Instructions

Stuff dates with pecan halves. Preheat electric oven to 400F. Grease baking sheets. In small bowl of electric mixer, cream shortening and brown sugar. Beat in egg.

Sift flour with baking powder, baking soda, and salt. Add alternately with sour cream to creamed mixture. Dip each date into creamed mixture to cover evenly.

Place on prepared baking sheets and bake for 8 to 10 minutes. Cool. In small saucepan, melt butter to brown lightly; cool.

In a small bowl of electric mixer, beat butter with powdered sugar and vanilla. Slowly beat in water until frosting is of spreading consistency; spread on cookies. Makes 6 dozen cookies.
