Stuffed Baked Apples Recipe - Cooking Index
4 tablespoons | 60ml | Apples: pippin - rome beauty (medium) |
1 tablespoon | 15ml | Flour all-purpose |
2 teaspoons | 10ml | Cinnamon - ground |

3 tablespoons | 45ml | Walnuts - chopped |
3 tablespoons | 45ml | Coconut - grated |
3 tablespoons | 45ml | Butter |
2 tablespoons | 30ml | Brown sugar |
Preheat the oven to 350F. Rinse the apples. Cut in half. Scoop out the cores and seeds (Do NOT Peel). Place the apples in cold water to cover. Add a little lemon juice. Set aside.
Prepare the filling:
Melt the butter in a saucepan. Add the sugar, flour, cinnamon and cloves. Heat. Add the chopped walnuts and coconut. Mix to blend. Remove the apples from the lemon water.
Pat dry. Place the apple halves in an oven-proof dish, cut sides up. Fill the holes (left by removal of the cores) with the nut mixture. Mound more of the nut mixture on top of each apple. Bake until the apples are tender and the filling is golden brown.
Serve warm with whipped cream or vanilla ice cream.
