Steamed Coconut Cups

Recipe Ingredients

  Dark Mixture
2 cups 474mlCoconut milk
1 cup 160g / 5.6ozRice flour
3/4 cup 120g / 4.2ozRaw sugar or brown sugar
1   Salt
  Light Mixture
1 cup 237mlCoconut cream
2 tablespoons 30mlRaw sugar or white sugar
2 tablespoons 30mlRice flour
1   Salt

Recipe Instructions

Blend all the ingredients for the DARK MIXTURE well and fill 15 large foil cups half full. Steam over medium heat for 20 minutes or until the mixture is set.

Blend the ingredients for the LIGHT MIXTURE and put 2 tb in each foil cup. Steam another 25 minutes or until it appears dry on top. Cool and run a knife around the foil cup to facilitate removal.

Serve cool or at room temperature with the light side up.
