Spiced Pineapple. Recipe - Cooking Index
2 | Pineapples (small) | |
40 | Butter - melted | |
1 teaspoon | 5ml | Cinnamon |
2 tablespoons | 30ml | Brown sugar |
Shredded rind of an orange | ||
1/4 cup | 59ml | Orange juice |
Ice-cream - to serve | ||
Extra orange rind to garnish |
Peel and slice pineapples, and remove the cores using an apple corer. Place slices into a non-metallic dish. Combine the remaining ingredients and pour over the pineapple. Cover and refrigerate for 1 hour, longer if possible.
Barbecue or pan fry the pineapple slices over a moderate heat for 3-4 minutes or until pineapple slices are heated through. Serve pineapple slices immediately with ice cream and garnished with shredded orange rind.
