| 3 | Dried pineapple rings | |
| 1/4 cup | 59ml | Dates - pitted |
| 1/4 cup | 59ml | Dried apricots |
| 1/2 cup | 118ml | Dried peaches |
| 3/4 cup | 177ml | Water |
| 1 tablespoon | 15ml | Lemon juice |
Put all the dried fruit in a bowl. Cover with lemon juice and stir to mix. Let stand for one hour. Then transfer the fruit and its liquid to a blender.
Blend at medium speed until thick and creamy, about 2 minutes. Pour into small custard cups.
Refrigerate until ready to serve.
If storing for longer than 24 hours, cover tightly and keep in the refrigerator for 5 to 7 days.
