Rice Apple Crisp Recipe - Cooking Index
2 cups | 320g / 11oz | Brown rice - (short grain), cooked |
1 | Tart apples - for pies* | |
1 tablespoon | 15ml | Lemon juice |
1 cup | 160g / 5.6oz | Brown sugar |
1/4 cup | 82g / 2.9oz | Corn syrup - or rice syrup |
1/2 teaspoon | 2.5ml | Cinnamon |
1/4 teaspoon | 1.3ml | Salt - optional |
3/4 cup | 120g / 4.2oz | Rice flour |
1 1/2 cups | 93g / 3.3oz | Oats - rolled (raw) |
6 tablespoons | 90ml | Reduced-calorie margarine |
1/2 cup | 46g / 1.6oz | Chopped nuts (almonds or walnuts) |
*Fresh apples are better! Peel and slice 6 large cooking apples mix with 1 cup of sugar 1/4 cup of water and microwave on high approximately 10 min or until soft.
Combine the cooked rice the apples, lemon juice, rice syrup and pour into a 9 x 13" pan treated with non-stick oil spray or margarine.
Mix flour oats brown sugar salt and cut in margarine until crumbly. Sprinkle over rice-apple mixture.
Bake at 350F for 30 minutes or until brown and bubbly.
