Rice Apple Crisp

Recipe Ingredients

2 cups 320g / 11ozBrown rice - (short grain), cooked
1   Tart apples - for pies*
1 tablespoon 15mlLemon juice
1 cup 160g / 5.6ozBrown sugar
1/4 cup 82g / 2.9ozCorn syrup - or rice syrup
1/2 teaspoon 2.5mlCinnamon
1/4 teaspoon 1.3mlSalt - optional
3/4 cup 120g / 4.2ozRice flour
1 1/2 cups 93g / 3.3ozOats - rolled (raw)
6 tablespoons 90mlReduced-calorie margarine
1/2 cup 46g / 1.6ozChopped nuts (almonds or walnuts)

Recipe Instructions

*Fresh apples are better! Peel and slice 6 large cooking apples mix with 1 cup of sugar 1/4 cup of water and microwave on high approximately 10 min or until soft.

Combine the cooked rice the apples, lemon juice, rice syrup and pour into a 9 x 13" pan treated with non-stick oil spray or margarine.

Mix flour oats brown sugar salt and cut in margarine until crumbly. Sprinkle over rice-apple mixture.

Bake at 350F for 30 minutes or until brown and bubbly.
