Rhubarb Bars Recipe - Cooking Index
2 cups | 125g / 4.4oz | Flour |
1/2 teaspoon | 2.5ml | Salt |
4 tablespoons | 60ml | Sugar |
1 cup | 198g / 7oz | Butter |
2 1/2 cups | 495g / 17oz | Sugar |
4 tablespoons | 60ml | Flour |
2/3 cup | 157ml | Coffee cream |
5 | Egg yolks | |
4 1/2 cups | 657g / 23oz | Rhubarb - diced |
Combine 2 cups flour, salt, 4 T sugar and butter. Pat into 9x13" pan. Bake 15 minutes at 350F. Combine rest of sugar, flour, coffee cream and egg yolks and beat well.
Add rhubarb and cook 5 minutes until thick. Pour over mixture in pan. Top with meringue.
