Pumpkin Bars Recipe - Cooking Index
1 cup | 62g / 2.2oz | All purpose flour |
1 cup | 62g / 2.2oz | Whole wheat flour |
2 teaspoons | 10ml | Baking powder |
1 teaspoon | 5ml | Baking soda |
2 teaspoons | 10ml | Ground cinnamon |
1/4 teaspoon | 1.3ml | Ground nutmeg |
1/2 teaspoon | 2.5ml | Salt |
3 | Eggs - lightly beaten | |
16 oz | 454g | Canned pumpkin |
1 cup | 160g / 5.6oz | Packed brown sugar |
3 tablespoons | 45ml | Vegetable oil |
Preheat oven to 350F. Coat 12x9 inch baking pan with vegetable cooking spray.
In small bowl, sift together flours, baking powder, baking soda, cinnamon, nutmeg and salt. In medium bowl, mix eggs, pumpkin, sugar and oil. Add flour mixture and mix well.
Spread batter into baking pan and even out with spatula.
Bake 25-30 minutes or until toothpick inserted in center comes out clean.
Cool and cut into 18 squares.
